Soybean sprouts are high in protein, at forty-seven percent. Protein is normally high in soybeans
but drops down to eighteen percent after cooking. The sprouting process maintaines its original
level. It is also the only plant source other than meatsĀ that provides every amino acid.
We are havingĀ unusual warm temperatures for January. This may allow us to start tractor work
early and get the fields planted. Of course we are far under the normal rain fall which will be a big
problem. But we have a unique opportunity.
